Mediterranean Couscous Bowl Recipe!

Another week to share an amazing recipe with you all- Mediterranean Couscous Bowl!

You will need:
olive oil, leek, capers, garlic, bell pepper powder, rosemary, bell peppers, green peas, salt, black pepper, couscous, stock cube, plant-based yogurt, fresh peppermint, cherry tomatoes, lemon juice, parsley.
Recipe:
In a pan add olive oil over high heat. Add sliced leeks and capers* and cook until they brown. Add minced garlic, bell pepper powder and cook for 1 minute until the aroma from the bell pepper powder comes out. Add fresh rosemary sprig, diced bell pepper, drained and rinses canned peas and cook until the bell peppers soften. Season with a small pinch of salt and ground black pepper. Add couscous, sugar-free, low-sodium stock cube and about half cup of water. Once the liquid boils, mix, put a lid on and rest for 5-10 minutes to let the couscous cook. Mix plant-based yogurt with fresh mint, a few tablespoons of water and a small pinch of salt. Fluff the cooked couscous using fork and add halved cherry tomatoes. Drizzle over lemon juice and chopped parsley. Serve with the yogurt sauce.
